Fruit Salad

Some days, it’s just too hot to cook. When I just want something quick, cool and easy to feed my hunger, fruit salad is perfect. I make a big batch on the weekend and for the next few days, I’m set. I don’t know if this is so much counts as a “recipe” or if it’s more of a method, either way, I’m sharing it with you. As with most of my cooking, this recipe/method can be modified to fit your tastes. Enjoy!

4 peaches, cut into 1-inch pieces

4 nectarines, cut into 1-inch pieces

4 plums, cut into 1-inch pieces

2 cups cherries, pitted and halved

2 cups grapes, halved

juice of  a lime or lemon

1-2 packets Nectresse Sweetener, or sweetener of your choice (honey or agave work well), depending on the sweetness of your fruit

1 cup no-calorie or low-calorie lemon-lime soda, or for an adult fruit salad 1 cup chardonnay or proseco





1. Add fruit to large bowl, with sweetener of choice and soda or wine. Mix fruit and chill for flavors to meld.

2. Enjoy fruit salad alone for lunch, dinner or as a snack or on top of pound cake or ice-cream.


NOTES, TIPS & TRICKS: If the fruit begins to brown, I like to freeze it in 1 cup portions and use it for smoothies.
