Avocado Cheese Spread

I get up pretty early most days. I have breakfast and java around 5:30am. By 9:00-9:30, I’m ready for a snack. I often enoy this spread on toast with tomato slices f0r breakfast. The spread is also yummy as a dip for veggies mid-morning, early afternoon or  as late night treat.You get it….this spread is pretty good on almost anything, anytime.Bonus points for this spread resistance to browning like plain avocado or guac. 

The protein and good fats usually tide me over until it’s time for lunch, dinner or linner. A tasty creamy treat with a lil spice that’s pretty healthy. I’m all in. No guilt required.

Servings: 2                            Serving Size: 1/4 cup                    Yield: 1/2 cup     SP: 2


INGREDIENTS:

1/2 small avocado, about 2 oz

1 wedge Laughing Cow Cheese Spread, or 1 oz reduced fat cream cheese

1 teaspoon lime or lemon juice

1 teaspoon Tabasco, or to taste

1/4 teaspoon salt, or to taste

1/4 teaspoon black pepper, freshly ground, or to taste

DIRECTIONS:

1.Scoop avocado flesh from shell with a large spoon.

2.In a small bowl mash together avocado and cheese. Mix in citrus juice, tabasco, salt and pepper. Taste and adjust seasoning.

3. Cover with plastic wrap and refrigerate until ready to serve or eat immediately.


NOTES, TIPS & TRICKS: This spread is fantastic on toast for breakfast, lunch, dinner or as a snack, with boiled eggs or stuffed into mini sweet peppers. This spread also makes a great dipper for celery, radishes, cucumber slices or any other veggie you dig.

Thin the spread with a little olive oil or water and use it as a creamy salad dressing.
