Simple Roasted Salmon

I love salmon. It’s one of my fav proteins. I like it roasted, broiled, fried…you know all the ways Forest Gump and his good friend Bubba love shrimp! This is my go to recipe for fresh wild salmon. I use this recipe as a base cooking method when I plan on making other things from the salmon like salmon salad or salmon cakes. This basic recipe, brings out the flavor of the deeply red fleshed fish and embraces the freshness.

Try this simple recipe, as the foundation for other flavors and accompaniments. Today, I’m going to top a salad with this simple roasted salmon….tomorrow, maybe salmon burgers or salmon fried rice. Prep Time: 5 min                 Cook Time: 20 min                       Difficulty: Easy Peasy

Servings: 2 lbs                      Serving Size: 4 oz                         Yield:  4 servings

 

INGREDIENTS:
2 lbs wild sockeye salmon

2 tablespoons fresh lemon juice

1-2 tablespoons olive oil

1 teaspoon kosher salt

1/2 teaspoon black pepper, freshly ground

 


 

DIRECTIONS:

1. Preheat oven to 400°

2. Season salmon with salt, pepper, lemon juice and olive oil. Rub spices into salmon. Place on rimmed baking sheet. Roast 15-20 minutes, until lightly browned and fish is springy to the touch.
