Watermelon Salad

Cold and refreshing, watermelon is one of Summer’s juicy pleasures. With a 37 pound watermelon from my local Farmer’s Market on hand, this weekend is all about the melon.

This salad doesn’t keep well overnight because of the melon’s water content and the feta. However, it’s easy enough to make one or two portions for a quick snack.

INGREDIENTS:

4 cups watermelon, cut into 1-inch cubes

1/4 cup fat-free or reduced fat feta

1/4 cup mint leaves, roughly chopped

1 tablespoon fresh lime juice
black pepper, freshly ground to taste

1-2 pinches red pepper flakes, optional

 

DIRECTIONS:

1.Combine watermelon, feta,mint, lime juice and peppers in a bowl. Adjust seasoning to taste. Divide among plates or bowls and enjoy.

2.Combine, consume, repeat…all summer long


Notes, Tips & Tricks: This recipes doesn’t keep well. I recommend cubing your watermelon once you cut it. Purchasing cubed melon, eliminates a step and gets you to eating quicker!
