Watermelon Fizz

What’s the perfect summer brunch drink? The Watermelon Fizz, is my version of a mimosa, subbing frozen watermelon cubes and watermelon juice for an icy drink to keep you cool when the temperature is soaring.

Go ahead, sit on the porch, with your feet up and enjoy a  sparking lazy-day cocktail or two.  It’s summer and you deserve it!

Servings: 2                             Serving Size: 1 cup                      Yield: about 2 cups

SP: 4 for 5 oz Proseco

 

INGREDIENTS:

1 cup frozen watermelon cubes

2-4 tablespoons watermelon juice, reserved from cubed melon

4-6 oz Proseco or sparking win, to taste

DIRECTIONS:

Blend frozen watermelon and watermelon juice until the mixture is slushy.  Divide watermelon slush between 2 glasses. Top with Proseco or sparking wine. Garnish with a watermelon cube. Sip, slurp and enjoy.

 

NOTES, TIPS & TRICKS: Substitute lemon, lime or your fav juice for watermelon juice if you like. The juice is just needed to provide liquid so that the frozen watermelon will blend. A couple of chilled watermelon cubes may also be used to blend with the cubed melon.

Plan ahead, when you cut up your melon, keep a batch of cubed melon in the fridge so you can whip up this cocktail on demand.
